Homemade Chicken Goujons in Tortilla Wrap

For 1 you'll need

  • For Goujons
  • 500g chicken breast
  • 65g wholemeal & white flour
  • 45g oats
  • Peanut Butter to coat
  • Rest of the wrap
  • 1 white/wholemeal tortilla wrap
  • Some carrot and celery sticks (Or any salad they like e.g. cucumber)
  • A thin spread of mayonnaise or tomato sauce
  • Rest of the lunchbox
  • 1 packet of Cheestrings
  • 3 strawberries and 6 grapes for fruit kebabs
  • (Note: Any combination of fruit or vegetables your child likes can be chosen, chop the sharp edges off the cocktail sticks or use a thick straw instead of a cocktail stick)
  • Small portion of homemade rice pudding
  • (Note: Follow on pack instructions, but substitute full fat milk for low fat milk & sweeten with dried fruit e.g. raisins rather than sugar. This can be made for dessert the night before & used in the lunchbox the following day.)

Preheat the oven to 240°C (220°C fan oven), gas 9 Cut 500g skinless chicken breast fillets lengthways into thin strips Put peanut butter on one plate and flour and oat mix on a second plate Roll the chicken strips in peanut butter first and then roll the chicken strips in the flour and oat mix Place the goujons on a baking tray and bake for 15 minutes or until crisp and golden Spread a little light mayonnaise or tomato sauce on the wrap Place two chicken goujons on wrap along with some celery and carrot sticks Roll wrap up tightly by folding in the sides as you roll up Cut the chicken wrap into four pieces Wrap each one in silver tin foil to turn them into pirate treasure
