Fragrant Chicken Curry

For 4 you'll need

  • 1/2 cup red lentils
  • 2 tbsp mild curry powder
  • 2 tsp ground corriander
  • 1 tsp cumin seeds
  • 1 1/2 cups chicken stock
  • 8 chicken thighs, skinned
  • 8 oz fresh shredded spinach
  • 1 tbsp fresh chopped corriander
  • salt and ground black pepper
  • 4
  • 5-6 mins


PLace lentils in to crock pot with curry powder, ground corriander, cumin seeds and stock. Cook on high for 2 hours. Add the chicken to the crock pot. Cook on high for 3 hours. Add the spinach to crock pot, cook for 30 mins. Stir in chopped corriander. Season curry and serve with boiled rice and poppadums.


If you dont have a large slow cooker then all the spinach will not fit in, use thawed, well-drained frozed spinach instead.
