Ella's Kitchen Chickpeas, courgettes, carrots + coriander

For 10 Ice Cubes you'll need

  • 1 carrot (about 75 g/2½ oz), peeled
  • and thinly sliced
  • 1 small courgette (about 100 g/3½ oz),
  • diced
  • 10 coriander leaves
  • 100 g/3½ oz canned chickpeas in water,
  • drained and rinsed
  • 10 Ice Cubes
  • 15 mins

Method

Steam or boil the carrot and courgette
in a saucepan over a medium heat for
810 minutes until they are tender.
Add the coriander leaves and heat
through. Purée with the chickpeas
and 34 tablespoons of boiled water
in a food processor, or using a hand
blender, until smooth.
