Breakfast Tray Bake

For 4 you'll need

  • 1lb/454g potatoes,unpeeled & finely diced
  • 1 red pepper, deseeded & sliced
  • 6 spring onions, sliced
  • fry light
  • Salt & Pepper
  • 1/2tsp dried thyme
  • 4 tomatoes halved
  • 8oz/227g mushrooms, halved
  • 8 rashers bacon, all visible fat removed
  • 4 eggs
  • 4
  • 50 mins


Preheat oven to 200 dec c/ 400 f/Gas 6. Plave the potatoes, red pepper & spring onions in roasting tin. Spray fry light, season well & scatter the dried thyme. Add the tomatoes cut side up & bake in oven for 20 mins. Add the mushrooms to the tray, push all the ingredients towards one side and arrange the bacon slices on the other side. Bake for a furhter 20 mins. Meanwhile, spray 4 ramekin dishes with fry light & break an egg into each. Place the ramekins in the oven for the final 15 mins of cooking time. Divide the ramekins and contents of the tray between 4 warmed plates, season & serve.
