80g Cocoa Powder
300ml Boiling water
250g Butter
550g Light Muscovado Sugar
4 Eggs, beaten
400g Plain Flour
1 tsp Bicarbonated Soda
Half tsp Baking Powder
Butter Cream
60g Butter
Half tsp Vanilla essence
1 tbsp Milk
7oz Icing Sugar

| Method: |
1. Preheat oven 180
2. Place cocoa powder in a pan and slowly add boiling water until smooth.
3. Put a low heat under pan and add butter and sugar and stil until melted and remove pan from heat. Allow to cool slightly.
4. Slowly add eggs and beat well after each addition.
5. Sift flour, bicarb and baking powder and then fold into cocoa mix. Mix will be sloppy!
6. Pour into cake tin and cook for 1 hour.
7. Remove from oven and leave to cool in tin for 15mins then remove from tin and leave to cool on a wire rack.
Butter cream
1. Beat butter and vanilla together until creamy. Add milk and beat some more.
2. Gradually add the sifted icing sugar, beating well. Add to the top of the cake instantly.
Same recipe is for chocolate butter Cream but just reduce the amount of icing sugar and replace with cocoa powder |

| Tip: |
| Dont add eggs too soon or the heat will make scrambled eggs and add eggs slowly or mix will curdle. |
