Preheat oven to 190 C/ gas 5
Line 12 muffin tins with muffin liners (I only have a 6 tin so had to make them in 2 batches!)
Sift together the flour, baking powder, bicarb of soda, salt, cinnamon & nutmeg
Mash the bananas
With an electric mixer beat the egg, sugar, oil and bananas together
Add dry ingredients and beat in slowly until just blended, stir in the raisins
Fill the muffin liners 2/3 full
Bake for 20-25 minutes until tops spring back when pressed lightly.
Transfer to a wire rack as soon as they come out the oven. |
