| Tuna and Cauliflower Cheese by cathe |

| Ingredients: |

1 Cauliflower broken into large florets
2 x 185g cans tuna in brine - drained
75g half fat cheddar or edam cheese
25g freshly grated Parmesan cheese
Sauce
25g cornflour
1/2 teaspoon dijon mustard
1/2 pint milk

| Method: |
Cook cauliflower in a pan of boiling water for 10 minutes or until just tender.
Meanwhile make the sauce - Put flour in a small pan, gradually adding milk and bring to the boil whisking continuously. Reduce heat and simmer for a minute until thickened. Stir in mustard and season to taste.
Fold tuna nad cheese into sauce, add cauliflower.
Spoon into a shallow dish, sprinkle on parmesan cheese and grill for 3-4 minutes until golden.
