| Ingredients: |

225g/8oz dried haricot beans (soaked over night)
2 sprigs of thyme
450g/1lb fresh italian pork sausages
1 onion, finely chopped
2 sticks celery, finely diced
300ml/1/2 pint dry red or white italian wine
1 spig rosemary
1 bay leaf
300ml/1/2 pint veg stock
200g/7oz can chopped tomatoes
1/4 head savoy cabbage, finely shredded
salt and black ground pepper

| Method: |
Put beans in a pan with the thyme and at least twice their volume of cold water. Bring to the boil and boil for 10 mins. Drain then add to crock pot, discarding the thyme.
Heat the oil in a frying pan and cook the sausages until browned all over. Add to crock pot.
Drain nearly all the oil away but leave 1 tsp in frying pan.
Add the onion and celery to frying pan, cook for 5 mins. Add wine, rosemary and bay leaf and bring to boil. pour over sausages. Add stock and season.
Switch slow cooker high for 5-6 hours.
Stir the chopped tomatoes and cabbage into the stew and cook for a further 45 mins.
Serve with crusty bread |

| Tip: |
| Tomatoes need to be added at the end of cooking because of their acidity would prevent the beans from becoming tender if added earlier. |
