Fragrant Chicken Curry by
Serves:  4
1/2 cup red lentils
2 tbsp mild curry powder
2 tsp ground corriander
1 tsp cumin seeds
1 1/2 cups chicken stock
8 chicken thighs, skinned
8 oz fresh shredded spinach
1 tbsp fresh chopped corriander
salt and ground black pepper

PLace lentils in to crock pot with curry powder, ground corriander, cumin seeds and stock. Cook on high for 2 hours.

Add the chicken to the crock pot. Cook on high for 3 hours.

Add the spinach to crock pot, cook for 30 mins. Stir in chopped corriander.

Season curry and serve with boiled rice and poppadums.
If you dont have a large slow cooker then all the spinach will not fit in, use thawed, well-drained frozed spinach instead.

Cook Time: 5-6 hrs
