| Chicken Fajitas by babybrett |

| Ingredients: |

450 g (1 lb) boneless and skinless chicken breast
5 tbsp oil
1/4 cup lime juice
Ground cumin, to taste
Cayenne pepper, to taste
1 large red pepper, cut into thin strips
1 large yellow pepper, cut into thin strips
1 large green pepper, cut into thin strips
1 onion, sliced thinly
1 garlic clove, crushed
1/4 tsp freshly ground black pepper
Flour tortillas
Guacamole (optional)
Soured cream (optional) |

| Method: |
1 Slice the chicken into thin strips.
2 In a bowl, mix together 2 tbsp of oil, with the lime juice, cumin and cayenne, a pinch at a time to suit your taste. Add the chicken and stir to coat.
3 Place the chicken with the marinade in a freezer bag and refrigerate for at least 2 hours.
4 In a large frying pan, heat 1 tbsp of the oil until very hot. Add the meat and stir-fry over a high heat for three to five minutes until the chicken is cooked. Remove from the pan and set aside.
5 Add the remaining 2 tbsp oil to the pan and heat until very hot.
6 Add the peppers, onions, garlic and black pepper and stir-fry for three to five minutes until tender and crisp. Return the chicken to the pan and heat through. Serve with warm tortillas,soured cream and guacamole, plus extras such as salsa and sweetcorn.
