| Potato,courgette and cheese fritters by babybrett |

| Ingredients: |

2 medium potatoes,peeled
2 medium courgettes,trimmed
2oz cheddar cheese,grated,2 eggs,lightly beaten
a pinch of ground nutmeg
2 tablespoons vegetable oil
1oz margarine

| Method: |
Coarsely grate the potatoes and courgettes,then get rid of as much liquid as possible by squeezing them between 2 plates.Put the vegetables in a bowl and add the grated cheese and eggs.
Heat the oil and margaring in a frying pan.Form the vegetable mixture into round,flat cakes and cook over a medium heat,turning frequently to brown both sides |
