| Ingredients: |

6 chicken thighs skinned and boned ( I think breasts will do too)
2 tsp herbs de provence
2 cloves garlic
2 meduim onions
1 courgette
1 red and 1 yellow pepper
4 tbsp olive oil
14oz/400g tinned plum tomatoes
salt and pepper
2 tbsp chopped fresh parsley
Basil leaves for garnish (optional)

| Method: |
. Rub the chicken thighs/breast with the herbs de provence
2. Peel and finely chop the garlic and onions
3. Wash all the veg and chop the courgettes and slice the peppers.
4. Heat 2 tbsp of the oil in a large frying pan add the chicken and fry for 4 mins, turn over and fry for another 4 mins. Then remove from pan and place on a plate. Keep them covered.
5. Add the remaining oil in the frying pan and then add the onions, garlic, courgettes and peppers. Cook, stirring for 2 mins or until the vegetables soften.
6. Add the tomatoes and parsley, then season with the herbs.
7. Add the chicken back to the pan and the cover and simmer for 20mins, until the chicken is cooked.
8. Garnish with torn basil leaves.
This can be served with rice and steamed brocolli.
