Easy Pizzas by Moomummy
Serves:  
 
Ingredients:
450g plain flour
1 tsp caster sugar
1 tsp bicarbonate of soda
1/2 tsp dried herbs de provence
350ml buttermilk OR 175ml plain yoghurt plus 175ml milk

Cheese and tomato topping:

400g tin chopped tomatoes
1 tbsp tomato puree
1 tbsp olive oil
1 tsp dried herbs de provence
pinch of salt and freshly ground black pepper
2 mozarella cheeses, about 150g each

Optional extras:

Pitted olives, Slices of pepperoni, ham, sliced pepper, mushrooms, pineapple chunks, tuna flakes, anchovies, sweetcorn etc
 
Method:
1. Pre-heat oven 200c/400f/gas 6

2. Grease 2 large baking trays with a little oil, or use a non-stick ;lining paper

3. Sieve the flour, sugar, bicarbonate of soda and salt into a large bowl then stir in the herbs de provence.

4. Make a hollow in the middle of the flour and pour the buttermilk or the yoghurt and milk mixture. Start to mix the flour into the liquid then gradually work all the flour into the dough to make a soft and slightly sticky mixture.

5. When the dough comes together into a ball, tip it out onto a work surface lightly sprinkled with flour. Work the ball of dough with both hands for 1 minute until it looks smooth.

6. Divide the dough into 4 equal parts and shape each into a ball. Flour your hands then gently pat out each piece of dough to a circle about 17cm across, then place onto the trays, slightly apart.

Topping:

1. Sieve the tomatoes over a bowl then place the tomatoes into a food processor. Add the tomato puree, olive oil, herbs, salt and pepper and garlic blend to make a lumpy puree.

2. Spoon 2 tbsp of the tomato mixture into the middle of each pizza then spread all around the doush leaving a 2cm border.

3. Slice the mozzarella and arrange on top of the pizza

4. Add whatever toppings you prefer

5. Bake in the oven until they are lightly golden brown and bubbling- about 15-18mins

6. Carefully remove from the oven and let them cool for a couple of minutes.

7. EAT AND ENJOY!!!!!!!!!!!!
