1tsp butter
500g (1lb 2oz) baking apples, peeled, cored and sliced
150ml (1/4 pint) apple juice
40g (1 1/2 oz) sugar
6 slices hot cross bun loaf
1 egg beaten
150ml (1/4 pint) milk
1 tsp vanilla extract
Pinch ground nutmeg
Single cream or natural yoghurt to serve

| Method: |
1. Preheat the oven to 190oC/fan oven 170oC/gas mark 5. Grease a 1 litre baking dish or 4 individual dishes with the butter.
2. Simmer the apples in the apple juice, with the sugar for 8-10mins. transfer to the baking dish/es
3. Cut each slice of bun loaf into 4 triangles. Beat the egg, milk and vanilla together. Dip the bun loaf in the egg mixture, arrange over the apples and sprinkle over ground nutmeg, if using.
4. Bake for 15-20mins until the topping is crisp. Serve with single cream or yoghurt. |
