Chicken Popcorn
Leftover Sunday roast chicken breast, chopped into small pieces
Leftover potatoes, chopped into small pieces
Leftover carrots, peas, cabbage (or any vegetables) chopped into small pieces
White or Wholemeal pitta bread
Beaten egg for binding
Light mayonnaise or tomato sauce
Cucumber
Rest of lunch box
Cheestrings
Slice of Banana bread
Portion of dried apricots and raisins
Water

| Method: |
Mix all of the vegetables, chicken and potatoes in a large bowl (approx. equal amounts of each)
Add egg, mix well, then add tablespoon of mayonnaise & mix well
Roll the mixture into small balls and pop on a baking tray
Cook for 10- 15 minutes at 180°C
Spread a little light mayonnaise/tomato sauce on one side of the pitta
Once cool, add two to four chicken popcorns into a pitta pocket (depending on size) & add sliced cucumber (Note: Larger pitta breads can be used for older children).
Wrap the pitta in tin foil
