| Serves: 6 |

| Ingredients: |

4oz – self raising flour
6oz - cooking butter
4oz - caster sugar
2 eggs
1/2tsp baking powder
1 tsb lemon juice
1 cup of fruit juice (I use cranberry)
3 (ish) cups grated carrot
2 (ish) cups mixed fruit.

| Method: |
In a bowl put 2 cups of mixed dry fruit can be anything and as much or as little as you want- your choice your cake!
Put the fruit juice in a pan and heat slightly then pour over the fruit. Set to one side
Grate carrots set to one side
Grease a cake tin 12inch – preferable to line tin in greece proof paper – set to one side
Set oven to 190c
Now....
Cream the butter and sugar together until light and fluffy
Give the eggs a mix before adding to mixture (don’t add direct from shell).
Mix in Self raising flour gradually
Add baking powder
Lemon juice
Then fold in the grated carrot and mixed fruit as well as the juice (if you don’t want the cake soft- don’t add juice)
Pour into the cake tin and put into the oven for 20mins or until you can put a knife into it and it comes out clean.

There are 2 ways of doing this – the quick or slow way……
Slow way
In a bowl put 2 cups of mixed dry fruit can be anything and as much or as little as you want- your choice your cake!
Cover in Fruit juice and cover. Set to one side and keep going back to mix up the fruit until it is soft
