| Kidney Bean Burgers by EmmaK |

| Ingredients: |
|
two 400g tins of red kidney beans
one small onion - roughly chopped
one egg
sweet chilli sauce
mixed herbs
plain flour
to serve:
six burger buns
ketchup (or whatever sauce you fancy)
baby spinach
tomatoes |

| Method: |
1. Mash up the kidney beans (it's easier with a food processor but can be done by hand) once they have formed a relatively smooth paste add in the egg, the red onion,one tbsp of mixed herbs and a tbsp of sweet chilli sauce and stir. Now slowly add plain flour until the mixture becomes stiff and difficult to stir.
2. Dust a chopping board or worksurface with plain flour and divide the kidney bean mixture into burger shaped patties (they're quite sticky at this stage so make liberal use of the flour!).
3. Fry the burgers for four minutes on each side and serve with buns, sauces and the trimmings. |

This recipe makes six burgers - so it can feed between two and six depending on how hungry everyone is (I challenge anyone to eat more than three of these as they are so filling!)
These burgers are high in fibre and iron thanks to the red kidney beans. Serve with spinach in order to increase the iron content and tomatoes which are high in vitamin c and help the body to absorb the iron! |
