Though technically it is not fish, but there is no seafood section.
When we stayed in Agropoli, Italy, we walked along the most gorgeous fish stall, and one day bought fresh clams to cook with pasta.
It was fab. Try it.
The recipe was suggested by the fishwife who sold us the clams.
For 2-3 adults you'll need
200-300 g dry pasta cooked al dente
500 g of clams
fresh parsley, a good bunch
olive oil, maybe three tbsp
a generous splash of white wine (about a small glass)
two big size tomatoes
2-3 cloves of garlic
one anchovy
Heat the olive oil in a big deep frying pan, throw the chopped garlic and tomatoes plus one anchovy, stir for a couple of minutes, and put all the clams in the pan. Add wine. Cover with a lid, and cook for 10 minutes. Check that all the clams have opened. If some are left closed, don't eat them.
Put the cooked pasta (linguine or spaghetti) in the clam sauce, and add the chopped parsley. Serve at once with a good chilled white wine.
You'll think you're in paradise. |
