spanish ommlette by
Serves:  6
 
Ingredients: spanish ommlette
bacon 10-14 rashers
eggs 5
block of cheese grated
1 onion
potatoes
 
Method:
fry the bacon and onion together until cooked but not crispy and put to one side to cool.
peel dice and part boil half a dozen potatoes and put to one side to cool.
grate the cheese.

once all ingredients are cold whisk 5 eggs with a splash of milk and salt and pepper to taste, (i usually throw in a dash of turmeric for flavour and colour too but this is optional.

Warm a little oil in a good sized deep frying pan, it needs to hot but not too hot! mix all ingredients together and slap in the pan and let it cook away on a low heat usually takes me around 15-20 mins then pop it under the grill for a few mins to brown off.

This dish needs to be thick so you can cut a slice like a pie. We use it fr snacks as it can be eaten hot or cold.
