| Stuffed Red Peppers with Sweet Potato Mash by EmmaK |

| Ingredients: |

2 red peppers
4 cherry tomatoes
1 small red onion - chopped finely
2 cloves garlic - finely sliced
Packet of haloumi cheese - cubed
2 medium sweet potatoes
4 spring onions
sprinkling of mixed herbs
knob of butter |

| Method: |
1. Preheat the oven to 200 degrees C.
2. Wash the sweet potatoes then cut in half lengthways and score the flesh with a knife to ensure that they cook evenly. Now bung the sweet potatoes in the oven (flesh side up) and cook for 40 minutes.
3. While the sweet potatoes are cooking cut the red peppers in half lengthways and scoop out the seeds. Now put a chopped cherry tomato in each pepper half and divide the red onion and garlic between all the pepper halves. Top with halloumi, a drizzling of olive oil and a sprinkling of mixed herbs. Put the peppers in a roasting dish with a couple of tbsp water and cook in the oven alongside the potatoes for 25 minutes.
4. When the potatoes have cooked scoop out the flesh from the skins and mash it up with some butter and spring onions.
5. Serve alongside the peppers and tuck in! |

| Tip: |
| Try putting the red peppers in to cook when the potatoes have 15-20 minutes left. This shoulc give you enough time to mash up the potatoes without the peppers getting cold. If you have a big appetite just make this with more sweet potatoes! |
