| Serves: 12-16 |

| Ingredients: |

100g soft butter
150g brown sugar
1 med egg
1 tsp vanilla essence
150g plain flour
3 tbsp cocoa powder
half tsp baking powder
200g choccie squares,(dark cooking choc is best,but any is gorgeous!)

| Method: |
Preheat oven to 170 degrees.
Grease and line either 2 baking trays or 1 very large one!
Place butter and sugar into a large bowl,mix together until all combined.
Add egg and vanilla and mix into butter mixture.
Add the flour,cocoa and baking powder and stir in,this makes a really thick paste,very difficult to stir but its meant to be like that!
Then stir in the choc pieces!
Divide the mixture into 12 or 16 table spoonful's and place on the tray.
Pop it straight in the oven and leave for 15 mins.
When they come out of the oven they will feel sticky but leave them to cool for half an hour and they will be firm but lovely and gooey in the middle,just like the one's you get in supermarkets!! |

| Tip: |
If you would prefer plain choc chip cookies,use all the same ingredients but take away the cocoa,just top up the flour to 200g instead of 150g.
Also,you can make a glaze to go on the top,by mixing icing sugar,cocoa,a tbsp of hot water and a few drops of orange or mint extract. Mix it into a very thick paste and add a dollop on top of the cooled cookies. Then pop them into the fridge so it sets.
These are gorgeous and so easy to make girls,give them a go!! |
