| Peanut Butter Cookies by Jaidynsmum |
| Serves: makes 24 |

| Ingredients: |

4oz plain flour
0.5tsp bicarbonate of soda
pinch of salt
4oz butter
4.5oz light brown sugar
1 egg (beaten)
1tsp vanilla essence
8oz crunchy peanut butter |

| Method: |
Cream the butter and sugar until light and fluffy
Gradually beat in the egg and vanilla essence
Stir in the peanut butter and blend thoroughly
Sieve in the flour, bicarb and salt and stir until blended.
Chill for at least 30 minutes, until firm.
Preheat oven to 180 C/gas mk 4
Grease two baking sheets
Spoon rounded teaspoonfuls of the dough and roll into balls.
Place the balls on the sheets and press flat with a fork into circles about 2.5 inches in diameter, making acriss cross pattern
Bake for 12-15 minutes until lightly coloured
Cool on a wire rack
