| Chicken with Paprika & Cardamom |

The first chicken recipe is a rich & satisfying casserole for the family - tender, succulent & bursting with flavour!
1. Chicken with Paprika & CardamomIngredients
1kg chicken casserole pieces
1 large onion
2 carrots
2 large sticks of celery
red wine
water
chopped fresh tarragon
½ tsp ground sweet paprika
15 whole green cardamom pods + seeds from four others
salt and ground black pepper
Method
Peel and roughly chop the vegetables into good size pieces
Brown the chicken in small batches and set aside
Saute the vegetables and add back the chicken
Cover with equal quantities of red wine and water
Add the remaining ingredients
Bring to the boil and cover with a close fitting lid, reduce the heat and simmer for about 90 minutes - until the chicken is tender
Serves 6
The whole cardamoms are not supposed to be eaten - tell everyone to leave them on the side of the plate.
2. Chicken Stir-FryThis is very quick to prepare and as well as being yummy, it fills you up too.
Ingredients
250g chicken stir-fry pieces
3 leeks
250g mushrooms
1 clove fresh garlic
fresh ginger root - approx 1 inch cube
fresh tarragon
1 tsp sweet paprika
salt to taste
olive oil
medium sized egg noodles
Method
The noodles take about 4 mins to cook. Put the salted water on to boil whilst you are preparing the vegetables. Drop the noodles into the boiling water as you start frying up the chicken, vegetables & seasonings - all will be ready simultaneously.
Wash and slice the leeks and mushrooms.
Peel and crush the garlic and chop a good handful of tarragon.
Peel the ginger and cut into fine "julienne" strips.
Heat a wide pan or wok over a medium high heat and add some Olive oil.
Add the chicken and stir-fry for a couple of minutes.
Add the leeks, mushrooms, garlic, ginger and stir-fry for another minute or two.
Seasoning as you go with salt, paprika and most of the tarragon.
Drain the noodles, toss into the chicken and vegetables.
Serve immediately, with the remaining parsley sprinkled on top.
